Pink Lemonade Cupcakes

I made these pink lemonade cupcakes recently for a coworkers birthday and they were such a hit I had to share the recipe. :)

Mix together Cake ingredients and follow cooking time directions on white cake mix box.  I cooked my cupcakes on 350 degrees for 18 minutes (just keep giving them the tooth pick check.)
  • white cake mix
  • 2-3 tbsp. Pink Lemonade Powder
  • A few drops of red food coloring (add a couple, blend, analyze and add more until desired color is reached)
  • 2/3 cup of vegetable oil
  • 3 egg whites
  • 1 1/4 cup of water
While cake is cooking, beat Frosting Ingredients together until mixture is well blended and nearly doubles in size. Set aside or scoop into icing bag with desired tip.
  • 2/3 cup room temperature butter
  • 4 cups of confectioners sugar
  • 1 tsp. lemon zest
  • 4 tbsp. lemon juice
  • a few drops of red food coloring (add a couple, blend, analyze and add more until desired color is reached)
 Allow cake to completely cool, minimum is 30 minutes but they should be cool to the touch.  Then go ahead and "ice" away. I garnished mine with straws I had cut down to about 2" long, and some chewy fruit candies shaped in lemon/lime wedges.You could also decorate with some pink colored sugar, for a quicker decorating time.
