Good morning Sunday! I have enjoyed my morning cinnamon coffee, and started on Thanksgiving planning. SO much to do, and most of it has to wait until the day of or night before. We are having at least 5, probably 8 total; 3 of which are vegetarian. Ahh! Not that I have anything against that at all, I just have no clue how or what to cook for them. Especially as being I still want the usual: Turkey, mashed potatos and Turkey gravy, stuffing (which I add chicken broth to). I know I can probably substitute vegetable broth in for the chicken broth in a few of the recipes, but any further suggestions?

ok so thanksgiving is the EASIEST meal for vegetarians! its my personal favorite because i dont have to eat any meat!
mashed potatoes - gravy on the side
yams, string beans, GREEN BEAN CASEROLE (hellooo??!! the best!)
stuffing gets a little tricky but you could try cornbread stuffing..not aware of a vegetarian substitue for chicken broth but im sure you can google something.
mac n cheese, salad...did i give you enough options? :) let me know if i can be of any more assistance.
also, in place of turkey, throw some tofu on the stove with some teriyaki and soy. mmm! have fun with it!
Thank you! Green Bean casserole is of course on the list along with sweet potatos. I spoke with some other people who suggested fish as an alternate to have along with Turkey for the meat eatters. I will either go this route or try to cook up some Tempeh. mmmm...:)
